Pumpkin Cheesecake Crust: Filling: Preheat oven to 350 degrees. For crust: In medium bowl, combine crumbs, sugar and cinnamon. Add melted butter. Press down flat into a 9-inch springform pan. Set aside. For filling: Beat cream cheese until smooth. Add pumpkin puree, eggs, egg yolk, sour cream, sugar and the spices. Add flour and vanilla. Beat together until well combined. Pour into crust. Spread out evenly and place in oven for 1 hour. Remove from the oven and let sit for 15 minutes. Cover with plastic wrap and refrigerate for 4 hours. I topped mine with whipped cream. Good luck and happy (early) Thanksgiving! Recipe from Paula Deen.

Take a look at these pumpkin picking tips and the pumpkin patches in Marietta.
To paint or carve: Look for a pumpkin that is visually appealing, evenly a deep orange. The shape should be whatever appeals to you. Pick a pumpkin without cuts, soft spots or bruises. The pumpkin should feel hard. Make sure the stem is attached. Keep pumpkins in a cool, 50 F to 65F dry, low humidity environment. For baking, you need a small (8” to 10” in diameter), sweet type of pumpkin developed for eating. The insides of these pumpkins are less stringy and smoother than decorative pumpkins. You can find these pumpkins at grocery stores, many pumpkin patches or farm stands. Look for firm pumpkins without soft spots or signs of rot.
