Recipe Corner: Cowboy Cookies

COWBOY COOKIES 2 cups flour 2 cup oatmeal 2 eggs 1 cup brown sugar 1 cup granulated sugar 2 sticks oleo (that’s butter) 2 cups pecans 1 tsp. soda ½ tsp. baking powder ½ tsp. salt 1 tsp. vanilla Mix butter and sugar; add eggs. Then add flour, baking powder, soda, salt, oatmeal and vanilla. Add nuts. Batter will be stiff. Drop with teaspoon onto baking sheet and bake at 300 until brown. Salty Thin, Crispy Oatmeal Cookies for the Holidays

This crispy oatmeal cookies with a sprinkling of salt are fail-proof, thanks to America's Test Kitchen. Enjoy!

INGREDIENTS INSTRUCTIONS 2. In standing mixer fitted with paddle attachment, beat butter and sugars at medium-low speed until just combined, about 20 seconds. Increase speed to medium and continue to beat until light and fluffy, about 1 minute longer. Scrape down bowl with rubber spatula. Add egg and vanilla and beat on medium-low until fully incorporated, about 30 seconds. Scrape down bowl again. With mixer running at low speed, add flour mixture and mix until just incorporated and smooth, 10 seconds. With mixer still running on low, gradually add oats and mix until well incorporated, 20 seconds. Chocolate Peanut Butter Cup Cookies: A Recipe for a Good Day

An irresistible combo of chocolate and peanut butter.

Chocolate dough with a peanut butter cup set in the middle. Makes about 36 cookies For the cookies: 1 cup semi-sweet chocolate chips 2 squares (2 oz.) unsweetened chocolate 1 cup sugar 1/2 cup butter or shortening 2 eggs 1 teaspoon salt 1 teaspoon vanilla 1 1/2 cups plus 2 tablespoons all-purpose flour 1/2 teaspoon baking soda For the garnish: 3/4 cup finely chopped peanuts 36 miniature Peanut Butter Cups, frozen and unwrapped 1 cup peanut butter baking chips 1/2 cup semi-sweet chocolate chips Preheat oven to 350 degrees.
